Funny how folks that don't RV, Camp, whatever we call it view what we do. Back in the corporate world, we would get away almost every weekend in the summer. Fellow worker commented that he couldn't eat hot dogs and hamburgers that often. That was his view of what camping/RV-ing was. He may have thought that was also for breakfast! I explained that a hamburger was only an occasional treat, that cooking was part of the allure.
I am sure many of you have also heard this same view from non-participants. I am also sure many have had to explain what really happens. What we hope this topic will expand to is a sharing of recipes, a sharing of how you explained what really happens on these weekeds or the full time travel.
One of our favorites, all the way back to when we traveled on a sailboat is a garlic chicken meal. Very easy, quick and delicious.

Our Awesome Garlic Chicken.
Skinless boneless chicken breasts (2) 1 Tblspoon chopped garlic 1/4 pound of butter, (didn't I say this was awesome) Course ground black pepper chopped basil. 2 tblspoon white wine 1/4 cup breadcrumbs
Cut chicken into 1" chunks. Melt butter in saute pan, add chopped garlic, skim off froth. add basil, pepper, add chicken, stir around until just opaque add wine and cover for 10 minutes. remove cover, add breadcrumbs, stir in to coat, they should soak up all liquid, if a little thin add a little more.
This is a great base for variations, some dijon mustard is a great change, maybe some crushed red pepper in place of black pepper, eliminate the breadcrumbs and add to angel hair pasta.
Experiment a bit, this is a two pan dinner, short prep time, and a wonderful aroma and taste.
